When you’re in the mood for:
Proper rosé (not cordial) · Strawberries & watermelon · Dry, crisp, smashable
This is not your “oops-it’s-rosé” wine. It’s intentional Mataro rosé – made on purpose, with purpose.
Fruit comes from Kennedy’s vineyard in Heathcote, picked just that little bit riper in 2025 for extra flavour, then fermented right through to dry so it stays fruity but not sweet. In the glass, think fresh strawberries and watermelon with a quiet Mataro spice hum underneath. It’s dry, with juicy fruit up front and a soft, lingering finish rather than a mouth-puckering snap.
We like our rosé to taste like wine, not watered-down cordial. So there’s a touch more colour, proper flavour and just enough texture that it never feels like flavoured water. It’s the kind of rosé that plays nicely with a picnic, long lunches, BBQs or a bowl of chips on the deck… and then politely asks for another glass.
Mataro is a bit of a chameleon – usually the backbone of big, broody reds, but more than happy to moonlight as rosé when you treat it gently.
After falling for our 2023 Mataro Rosé, we headed back to Kennedy’s in 2025 knowing the brief: dry, flavour-packed pink that still tastes like wine. The season gave us beautifully clean fruit with a little extra ripeness, so we aimed that straight at more flavour rather than more sugar.
Whole bunches went straight to the press and we ran long, gentle cycles – enough pressure to coax colour and flavour from the skins without dragging in harshness. Juice went straight to cool stainless, no oak in sight, and we kept the ferment on the cooler side to hang onto the strawberry-and-watermelon perfume.
Once it finished, we let the wine settle clean and left the texture work to Mataro itself – it naturally brings a bit of spice and shape, so we didn’t need tricks. No oak, no sweetness, no citrusy whiplash – just a dry rosé with real fruit, a soft textural glide and a finish that makes warm afternoons feel suspiciously shorter.
In the glass it’s all 2025 Mataro Rosé: fresh strawberries, watermelon, a gentle Mataro spice line and a crisp, refreshing finish. Proper rosé for people who like their pink to behave like wine, not lollies.
